Uganda food and crops drying characterisation for automation of a Day-Night solar dryer

Introduction
Drying has been widely used as a food processing unit operation since ancient times. Despite improvements, agricultural losses remain high in developing countries due to poorly engineered drying systems. Small and medium enterprises dominate food processing but lack access to moisture testing facilities, leading to partially dried products, persistent food losses, and reduced incomes. Developing a fully automated solar crop dryer will mitigate these challenges by ensuring high-quality products and better farmer livelihoods.
